Organic Tofu With Crimini Mushrooms And Sautéd Red Onions

I love this super healthy, non GMO, organic tofu with salad. Sodium: 25mgs per serving 

I use Extra Firm organic tofu and after cutting into cubes, sauté it in delicious, organic olive oil with three diced garlic cloves until golden brown. Remove from the pan and place on a paper towel. 


The salad dressing is very basic, but so delicious. It consists of equal parts organic olive oil, and organic balsamic vinegar that I purchase from Whole Foods. I add a tablespoon of Yippee Ki Yay Organic Chunky Chipotle, either regular or lemon, and whisk it all together. It's smoky, spicy and mmm, tastes so darn good.


For the side, peel, chop and sauté a small red onion until translucent, about 3 minutes.

Wash and chop mushrooms of your choice; I love creminies, and add them to the onions, cooking for another 2 minutes.

For a garnish, I sprinkle on some parmigiano cheese.

Serve and enjoy.
